Strawberry Cake

On Friday I made a special cake for my hubby getting promoted.
I bought this wonderful cookbook while I was in Houston and it is full of southern desserts.


The strawberry cake is the first thing that I wanted to make.
It looks so yummy!


I laid out all my ingredients...


Mix everything....I had fun blending the strawberries.


So perfectly pink before they go in the oven.


YUM!!!!


Triple-Decker Strawberry Cake

1 package white cake mix
1 3oz package strawberry gelatin
4 large eggs
1/2 cup sugar
1/2 cup finally chopped strawberries
1/2 cup milk
1/2 cup vegetable oil
1/3 cup flour

Preheat oven 350. Beat cake mix and the next 7 ingredients. Stawberries should be well blended.
Pour batter into 3 greased and floured 9in. cake pans. (I only used two)
Bake for 23 minutes (I baked longer since only using 2 layers)

Strawberry Buttercream Frosting

1 cup butter
1 32 ounce package powdered sugar
1 cup finely chopped fresh strawberries

Beat butter until fluffy. Add sugar and strawberries, beating at low speed until creamy.
Add more sugar if too thin or add more strawberries if too thick.

I used more sugar to get the consistency more "frosting" like.
I should have let it sit in the fridge to get more firm before frosting the cake.
It was really good but the frosting was a bit too sweet. After sitting the next day I think it tastes much better.
I would definitely make this again.

Yum Michelle! I have looked for and tried all kinds of strawberry cake recipes and still haven't found the perfect one. This is going into my favorites so that I can try it. If it taste as good as it looks (and it certainly looks good), then it is a keeper! Thanks for sharing. Also, thanks for stopping by earlier, always great to see you. Strawberry is one of my all-time favorites and this looks delicious! We even had a strawberry wedding cake YEARS ago and I still love it.

We are a family of strawberry lovers and tht cake looks delightful! My mouth is watering! How perfect is the plate it's on, so pretty! Will definately try this and the cookbook looks like it has a lot of great recipes! Congrats on your hubby's promotion! Does he work near the flight line? It would be so cool if he and Aaron could meet before they go!
